11:25 it's an incredible transition food this
11:27 is a transition tool this is to get you
11:31 off of a bad fat right
11:33 is to get you off of a bad fat and in
11:36 the episode I talk about how the fat in
11:38 an avocado is different and has nothing
11:40 to do with Omega-3s sixes and nines and
11:42 that whole BS thing it has nothing to do
11:44 with that
11:46 the fat is a different viscosity it
11:48 keeps the blood a little thinner and
11:50 that's the reason why it's an incredible
11:52 transition tool to get you off of the
11:55 bad fats not about Omega-3s and omega-6s
11:58 it's not about that I know the vegan
12:00 doctors are talking about that now
12:01 because they have a theory
12:03 from studies that always get proven
12:06 wrong over and over and over again I
12:09 don't know if you guys have ever noticed
12:10 that constantly in medicine both
12:13 alternative and conventional the
12:15 theories come out the trend goes around
12:16 and then it gets debunked and then they
12:18 found out it was wasn't even studied it
12:20 wasn't even proven and then boom on to a
12:22 new Theory then on to a new Theory the
12:25 big Theory now is omega-6s are the bad
12:27 ones that's the bad ones right so an
12:30 avocado has a bag of six in it right but
12:32 avocados are still incredible for you
12:34 right it's always contradicting
12:35 contradicting the point is is the fat in
12:39 avocado is thinner they don't know that
12:42 part science research food science does
12:45 not know the avocado fat is thinner the
12:47 viscosity is different and because of
12:50 that and because it has sugar in it with
12:53 it combined so it's Nature's way of
12:55 putting sugar and fat together the right
12:58 way right because of that it's healthier
13:01 there's a healthier reason for the that
13:04 it's less of a thicker fat it has a
13:07 different viscosity it's got a thinner
13:10 nature to it it allows sugar to do its
13:13 thing because there's sugar in the
13:14 avocado as well but it's an incredible
13:16 transition tool too to getting someone
13:19 off of the bacon off of the eggs off of
13:22 the dairy products off of the cheese off
13:24 of the meat off of all that kind of
13:26 stuff the avocado is a transition tool
13:29 to get you off of the bad stuff and
13:31 that's what I talked about all these
13:33 years I'd be like
13:35 avocado get rid of that block of cheese
13:38 move that block of cheese out and bring
13:40 in the avocado
13:42 red eye banana aw well avocado combined
13:45 with potatoes cause insulin resistance
13:47 depends on healthy your liver is okay
13:49 all depends on how over the years your
13:52 liver's been beaten down stagnant
13:54 sluggish any kinds of problems or
13:56 anything like that that all depends
13:58 there too on your liver so
14:01 if you're somebody and you've been
14:02 through a lot with your health you got a
14:04 stagnant sluggish liver you've got weak
14:06 digestion weak bile reserves you got
14:08 weak hydrochloric acid right there
14:10 you're all kinds of buggy you've got
14:13 pathogens you got toxic heavy metals
14:15 you're not well you have a lot of
14:16 different diagnoses or problems or maybe
14:18 you're just somebody with just weak
14:20 digestion and in a liver issue right
14:22 that you don't know about like a
14:24 pre-fatty liver and you don't even know
14:25 where you're pre-diabetic and you don't
14:27 even know it because of your liver then
14:29 yeah if you put potato and avocado
14:31 together it's not the best of the best
14:33 because you're putting a you know a
14:36 starch and a fat together so when you
14:38 put starches and fats together you can
14:40 raise your insulin resistance right but
14:42 if you gotta if you cleaned up that
14:44 liver
14:45 right if your liver's clean and it's not
14:47 stagnant sluggish and you've got your
14:49 bile Reserve strong and you got your you
14:51 got your hydrochloric acid strong in
14:54 your stomach you've got your gastric
14:55 glands built up you got your system
14:58 working really good and you're not
15:00 bombarding yourself with all these bad
15:02 fats you're staying off of bacon you're
15:04 staying off of ham you're staying off a
15:06 baloney you're staying off a butter
15:07 cheese milk and then you do avocado
15:12 with potato you're not going to get the
15:14 insulin resistance but if you're
15:15 somebody that's you're already that
15:17 sensitive and you've been through a lot
15:18 and you're trying to and you're move you
15:20 know and you're on these other also
15:21 you're doing all these other bad fats
15:23 sure you'll just get insulin resistance
15:25 because that's what happens
15:27 so that's kind of a quick explanation of
15:30 that let's start making a guacamole

15:36 that's why I'm asking it's not a detox
15:38 cleansing tool when you put
15:41 a fat
15:43 right a fat with any kind of starch
15:48 right or you put a fat in the diet let's

15:57 here it is if you're going to eat fats
16:01 milk cheese butter eggs nuts nut Butters
16:04 nut milks avocados right peanut butter
16:08 oils meat chicken lamb turkey whatever
16:13 eggs if you eat any fat you can't
16:18 cleanse so your body doesn't cleanse or
16:22 cleanses very little very little if
16:26 you're doing a fat right so but it
16:30 depends how many fats are you doing and
16:32 what kind of fats are you doing right if
16:34 you're only doing a little bit of
16:35 avocado every other day or a little bit
16:38 of avocado each week you've got a better
16:40 chance of cleansing all in between but
16:43 yet avocado is the best fat Source one

18:49 avocado that is a great substitute when
18:53 a mom can't breastfeed so that's another
18:56 thing too so know that that's in this
18:58 episode is it the moms that can't
19:01 breastfeed how you can use avocado to
19:04 make milk okay and that's the key right
19:07 there so I want you guys to see that I'm
19:09 gonna make some guacamole right now let
19:11 me get working on it
19:13 you guys that's the plan so let's get
19:17 started we need a bowl first and then I
19:20 shall get that bowl now and I am looking
19:22 I have one right here
19:27 so yeah so I got a nice glass bowl which
19:31 I really like for this
19:33 I will get another one
19:35 let's do that so it's really great

20:12 so we're doing some avocado first things
20:14 first I always tell everybody and I've
20:17 talked about this before too right take
20:19 out the butt right here I just want to
20:21 show you guys real quick
20:24 don't let these fall into your avocado
20:26 dish right there see that
20:29 don't let that fall in whatever you do
20:33 because that's hard as a rock for real
20:36 so if you got company over and Grandma
20:39 comes over and she loses she loses a
20:43 crown or something because she was
20:45 eating your guacamole she's gonna be
20:46 like really pissed so you take off those
20:48 butts right there if you have them on
20:51 there you see so that's really important
20:53 all on its own right
20:55 another thing too what I do is I'll take
20:58 the knife
20:59 and I'll just do this like a billion
21:01 other people probably do and have right
21:05 so I opened it
21:08 there you go
21:09 that now I don't recommend other people
21:12 to do it that way but I always stick the
21:14 knife in there like that that's one
21:15 thing I do and then I just put it right
21:17 here on the counter
21:18 and I twist it and it pops off so if you
21:21 guys see that right there
21:24 so I'm going to make an herb guacamole
21:27 but it's very potent with herbs a lot of
21:31 herbs this is a medicinal version right
21:35 because I like turning this into
21:37 medicine and that's the deal with what
21:40 I'm doing my guacamole I like turning
21:43 turning it into medicine that's what I
21:45 like to do
21:46 I like it nice and medicinal
21:48 that's the uh
21:50 that's the best the best way to do it so
21:52 let's make sure we get it in the middle
21:53 there
21:55 you know and look you got to remember
21:57 the harder the avocado is too right
22:00 never pull a pit off with your hand on
22:02 the knife I'll show you that too so let
22:05 me cut a couple of others now
22:07 I like making a big one when I make one
22:10 so I'm taking another butt off there
22:12 I like making a bigger one
22:15 now when you guys listen to the episode
22:17 there's all kinds of like pieces of
22:20 information in there that might just
22:21 skip by you it's always good to listen
22:23 to these informative podcast episodes
22:25 more than once if you get a chance you
22:28 know that's always a good thing to do
22:30 right
22:32 so never pull the pit off of there with
22:34 your hand I've seen people do this
22:37 and just literally cut their I've seen
22:39 cooking shows out there right
22:42 over the years or watch a cooking show
22:44 or something and I'm like oh what are
22:46 they doing what is that and all of a
22:48 sudden you see somebody actually do that
22:49 and they take their hand and they do
22:50 this
22:52 you don't want to do it that way you're
22:54 you're bound to get cut especially if
22:55 you have a really really sharp knife
22:57 right I put it on the board just like
22:58 that I drop it down like that and I just
23:00 give it a click like
23:04 if you guys just came on here we're
23:06 talking about the medical meme podcast
23:07 avocado or you avocado toast I'm making
23:10 some guacamole right here so I got a
23:12 nice avocado that's a good one there
23:13 don't do the real mushy avocados where
23:16 they're rotten
23:18 right if you buy avocados buy them green
23:23 buy them green great tip
23:27 if you buy them like this there's a
23:29 chance that they're bruised they've been
23:31 squeezed too many times by people
23:33 passing by the you know like people drop
23:36 them on the ground put them back up
23:39 um on the you know on the
23:41 you know shelf right there that's what
23:43 they do so what I recommend is
23:46 buy them green let them ripen
23:49 at home that's what I recommend
23:52 okay
23:53 that's a that's a really pretty one
23:55 right
23:57 and with this right here remember put it
23:59 like that and don't do it by hand never
24:01 do this
24:03 ow never do that right and you put it on
24:07 the board and you just give it a little
24:09 click and there you go comes off
24:13 and look listen
24:15 you don't even have to do this don't
24:16 even do it with a knife because I've
24:17 seen people do this I've seen people who
24:20 just don't have like a good handle on
24:23 doing this kind of thing so and they got
24:26 a really sharp knife and for the first
24:27 time they have a pick here and they end
24:29 up doing this and they miss and they hit
24:31 their hand right like wow like ah and
24:34 then you're on you're going to the
24:35 hospital right so you don't want to do
24:36 that too you want to be careful so I'll
24:39 do one more and you just dig it out with
24:41 a spoon we'll do this little one right
24:42 here here's a small avocado
24:44 right
24:46 so
24:48 there we go
24:50 and you can do a spoon if that's the way
24:53 to do it if you want you can also
24:55 squeeze it if the avocado is Right ripe
24:57 enough because I know a whole bunch of
24:58 people are like why don't you just
24:59 squeeze it aw you know you can do it
25:01 that way too but why don't like that is
25:03 sometimes if the avocado isn't that ripe
25:07 what happens is it ends up you squeeze
25:09 the pit out and you have a lot of the
25:11 avocado on the pit still so that's
25:13 another reason why I don't like doing it
25:14 and I don't when I'm busy and I'm
25:16 cruising and I'm trying to get you know
25:18 things done in time I don't want to be
25:19 trying to like bite it off or take you
25:22 know meat off the pit right it's just
25:24 it's a Time waster so that's why I do it
25:27 the other way so
25:28 let me scoop some avocado in here
25:31 okay now there is a
25:36 myth I call it a myth it's it's really
25:39 you know people put the pits back into
25:41 the bowl to try to keep the avocado
25:43 fresh it doesn't work
25:45 it's it's not that the only way you can
25:47 keep your avocado fresh is if the pit
25:50 wasn't removed out of that half right
25:54 so that's different you can't just make
25:56 a guacamole leaf and then put a pit on
25:59 top of the bowl and expect that to
26:01 actually keep it fresh that's just not
26:02 the way it works right so I'm putting it
26:04 in here you guys could see my halves are
26:06 going in here I'm not counting I'm just
26:09 making a bigger guacamole versus
26:12 um a really small one right
26:14 there we go
26:16 I don't like my avocados mushy I don't
26:19 like them over ripe they can get
26:21 fermented fermented causes trouble a
26:24 fermented avocado is not only disgusting
26:27 it tastes awful not only but it can give
26:30 you a belly ache so a fermented avocado
26:33 can definitely give you a belly ache so
26:35 keep that in mind right so this is a
26:39 very thin skin one right here
26:41 and you'll find some Skins are thicker
26:44 on the avocado some are thinner so
26:48 now some avocado varieties you can eat
26:50 the skin
26:53 some it's not a good idea
26:55 okay

27:29 medicinal guacamole and this medicinal
27:31 guacamole is about using herbs so it's a
27:35 medicine guacamole right Olivia Lutz yes
27:39 you can be fat free forever that would
27:40 be ideal actually I would read the books
27:43 people laugh out loud you can be on the
27:45 369 advance for a lifetime yes you can
27:49 100 accurate information and Powerful
27:53 information for somebody who's been
27:55 really sick chronic illness and it needs
27:58 to heal and they need to be on it for
28:00 years to finally get past what they've
28:03 been fighting in their life their their
28:05 sicknesses and stuff Renata says aw a
28:07 bit of skin went in the bowl yeah I know
28:10 I know you got good eyes you got good
28:12 eyes we will find it if we can I don't
28:15 mind if it's in there it's just that
28:18 you know if you're giving this to
28:19 company or something like that if
28:21 company comes over and they're like why
28:23 is this chewy piece of skin inside my
28:25 guacamole right but yeah it's in there
28:27 somewhere okay
28:30 so let me get a nice Fork right here for
28:33 some mashing
28:35 I will use this one okay now I'm not the
28:39 thing is like what people have to
28:41 understand right is that
28:44 this is a perfect chance to put medicine
28:47 in your food because
28:51 the fat hides
28:54 the flavor of really intense herb
28:59 amounts like when you're using Rosemary
29:03 in thyme so let's go over this a little
29:04 bit so I got some thyme right here
29:07 it's out of the garden I got some
29:09 Rosemary out of the garden too let's
29:10 cover this this is medicine right here
29:12 this herb it's incredible
29:14 now here's what I do now I cut these for
29:18 the show so I I took this off my
29:20 rosemary plant and I cut these for the
29:22 show right but I don't do that I don't
29:24 cut my rosemary plant ever I strip my
29:28 rosemary plant so here's how I do it is
29:31 say this rosemary plant is still here
29:33 and like and I'm outside right now and
29:36 I'm going up to my rosemary plant
29:38 for this show I said well I'm gonna cut
29:42 these so let me go and cut these for
29:44 everybody for this joke because I want
29:46 to show them this all right okay here we
29:49 go I cut these this is for the show now
29:51 I don't do that
29:53 this is what I do even though I had to
29:56 do for Joe this is what I do instead of
29:58 cutting them I take my hand
30:01 and I pull the leaves off but I leave
30:04 the stems so let's do that now so just
30:06 pretend this is just sitting out there
30:08 right
30:09 okay I'm outside now right
30:12 that's what I do did you see that
30:15 so when I'm making my food at home
30:18 I leave that stem like that on the plant
30:23 and then I have all the Rosemary in my
30:25 hand I'll show you a close-up real quick
30:27 now the reason why I do this is because
30:29 the leaves will grow back on this stem
30:33 faster than if you cut the whole stem
30:36 and now you're kind of just basically
30:39 cutting down and cutting back your
30:41 rosemary plant and then you're not going
30:42 to be able to use it all the time
30:43 because it's going to need to grow and
30:45 it could take a long time
30:46 so what I like doing is stripping the
30:48 plant down so it's something I want to
30:50 show you guys right there that I thought
30:51 was important
30:53 uh you know piece of important
30:55 information there
30:56 Marianne says aw please tell our friends
30:59 why they should wash them first avocados
31:02 why bother washing the avocado you can
31:06 get all the
31:07 germs you want
31:09 that's sitting there in the grocery
31:10 store and everybody's walking by and
31:13 they're all walking by and they're like
31:16 who cares they just came out of the
31:18 bathroom and he just wiped their butt
31:21 um do you know how they wipe their butt
31:23 do you know how people wipe their butt
31:25 are they good at it
31:28 right because
31:30 last I've known all these years people
31:33 who wipe their butt with the toilet
31:35 paper still get everything from their
31:36 butt all over their hands
31:38 they're not careful
31:40 so everybody just going to the store and
31:43 grabbing everything yeah and whatnot of
31:45 course that's just one thing
31:50 oh
31:51 oh
31:53 lots of sneezing going on my God but
31:57 that's okay
31:58 you know it doesn't matter if anybody
31:59 sneezes on your avocados in the store
32:01 either who cares right
32:03 don't wash them right it doesn't matter
32:06 oh the carriage oh there's only a
32:09 hundred varieties of streptococcus on a
32:11 carriage handle but that's okay is
32:14 everybody pushing their Carriage to the
32:15 store they can just touch the avocados
32:17 and kind of look for one I'm looking for
32:19 one right here oops I Spit on them uh oh
32:22 I was talking to someone and spit flung
32:25 out of my mouth on the avocados but
32:27 don't wash them because you don't need
32:29 to wash them just just take them home
32:31 from the store and just cut right in
32:33 there and make sure your kids and you
32:35 and everybody is just eating and
32:36 whatever no big deal that's why it's
32:39 important to wash them and that's just a
32:41 couple of reasons there's a lot more
32:42 reasons right
32:44 so what I'm doing here right so I'm just
32:48 kind of mashing these lightly at first I
32:50 don't want to puree these right
32:53 okay
32:54 and the other thing is the knife
32:57 will shove the germs in
33:00 so if you don't wash the outside in the
33:02 skin the knife is going to drive all the
33:05 germs in well that's right there's no
33:06 such thing as germs like people think
33:08 okay that's why everybody just went
33:10 through hell and back for the last
33:12 couple years and chronic illness is at
33:14 its worst anyway no there's no germs of
33:17 course not don't have to worry about no
33:19 bugs
33:21 suit it makes you stronger to get germs
33:23 oh it does oh sure

33:27 their mask in the produce section so
33:29 they could pick their nose
33:32 really and I bet you that one person
33:36 that did that probably put the booger on
33:40 that produce at the same time so

35:43 you will have Brown guacamole really
35:46 fast okay just letting you know lemon
35:49 and lime stop it from browning or hold
35:51 it back from browning right
35:54 and but you still don't want to puree it
35:58 so let's move the guacamole over a
36:00 little bit
36:01 okay let's chop up some herbs let's do
36:05 that now
36:06 so I got some Rosemary right here
36:10 now this is a medicinal guacamole and
36:13 what you're looking at is a lot of
36:15 Rosemary it's the way I do it you don't
36:18 have to do it the way I do it you can do
36:20 it any way you want I'm going to strip
36:21 off more of this okay
36:25 see how much Rosemary's there look at
36:26 that I might even do a little bit more
36:28 check that out you guys that's the way I
36:30 do it
36:32 now this is very Rosemary e for real
36:36 okay like this is really serious like
36:39 amounts compared to that rosemary plant
36:43 that sits on the salmon at the
36:45 restaurant you know the rosemary plant
36:47 that sits on the salmon in the
36:48 restaurant little piece of rosemary
36:50 plant you just move it over this is like
36:52 a lot of Rosemary
36:55 and I chop it really fine is what I do
36:59 okay that's how I like it
37:02 so I get it to a point where then I'll
37:04 chop it a little bit more too
37:08 just get it nice and good
37:13 there you go
37:17 so that's the Rosemary part I'm gonna
37:19 scoop it into my hand
37:22 and into the bowl
37:25 sprinkle it right on top
37:27 see how much went in there now you may
37:29 not like the taste of this so do less
37:32 how about just baby stepping I don't
37:34 have to do a lot of that let's get some
37:36 more herbs here whoa
37:40 what's this right so I took this out of
37:43 the garden
37:44 that's lemon balm okay now I like doing
37:47 a little bit of lemon balm in the
37:50 guacamole make it real medicinal the
37:53 herbs make it medicinal avocado itself
37:56 on its own it's not medicinal enough to
38:00 take care of what we're up against right
38:02 now in the world of Health meaning the
38:04 problems people are up against the
38:05 pathogens the metals everything else
38:08 that's wrong with them it's not enough
38:10 to just eat an avocado as as beautiful
38:13 and pure and naturistic that avocado is
38:16 it's still got the fat in there and
38:19 that's okay it's a better fat but if
38:22 we're gonna eat that avocado and eat
38:24 that fat let's make it medicine because
38:26 we need things so we can fight sickness
38:30 and illness here's a little bit of lemon
38:32 balm
38:33 chopping up a little bit of lemon balm
38:36 real quick that's gonna go in the
38:38 guacamole Michelle L trolls also getting

38:42 you wouldn't believe the things they

41:18 some oregano so I got some oregano here
41:21 Oregano's got a strong flavor but when
41:23 you're using avocado
41:26 to mask the flavor intense flavors of
41:30 these herbs you're using it
41:33 right as a vehicle like Michelle said
41:36 that's what you're doing so I'm doing
41:38 some now oregano now this guacamole is
41:41 getting really medicinal
41:43 that might have been a a weed right
41:46 there from the garden
41:49 so
41:51 all right there we go got some oregano
41:54 now so let's chop up that
42:00 all right so now we have Rosemary in
42:02 there we have oregano in there garlic
42:04 chives in there
42:08 we're also going to put some scallions
42:10 in
42:11 so we're gonna have that too
42:14 now you can chop them up as fine as you
42:16 want I like it just fine enough
42:19 here we go
42:23 perfect
42:25 for me it's the way I like it
42:27 so let me just give you a little window
42:28 in this here's the guacamole coming
42:31 together
42:32 so far you're looking at a lot of herbs
42:34 in there you're looking at the medicine
42:37 it's the Rosemary chopped up it's the
42:40 oregano chopped up it's the garlic
42:42 chives chopped up right there it's the
42:45 lemon balm there's a little bit of lemon
42:46 balm in there let's keep on going
42:49 because we got some work to do Sage
42:51 right there incredible

43:44 bit so what I'm doing is I'm kind of
43:45 just taking it right off
43:48 the stems don't even need to really chop
43:50 this
43:51 it's dry it's nice and fine I'll give it
43:54 a light chop
43:58 here it is you got your time right you
44:00 guys know how I think about time
44:03 you guys know I love it putting that in
44:06 the guacamole let's keep on going
44:07 scallions
44:10 right oh we got some right here look at
44:12 this I always Cut Off The Roots I want
44:14 to show you guys
44:15 here's what I do Cut Off The Roots
44:18 I didn't have to cut that I could have
44:20 cut back even better than that but I was
44:22 doing that pretty quick right so
44:24 I like scallions inside
44:27 my guacamole
44:29 flavors it nicely
44:31 hides well as well as you know like if
44:34 you're somebody that's really you don't
44:36 like that onion flavor
44:38 gives it texture too so that's what's
44:41 incredible about the scallions gives the
44:44 guacamole texture
44:46 something in there right
44:49 I like my guacamole nice and
44:52 like I want things in there right
44:54 incredible any particular Sage you can
44:56 use the one that you like best for sure
44:58 so let's move on we've got some
45:01 scallions in there okay here's one
45:02 that's interesting
45:04 mustard greens you guys mustard greens
45:09 now
45:11 the World of Food Science
45:14 right
45:16 believes it's just a green
45:18 mustard greens
45:21 but mustard greens should be classified
45:23 as an herb
45:26 it's a mistake it's not classified
45:28 correctly out there people don't know
45:31 that that is an herb and it should be
45:34 classified as such very medicinal very
45:38 spicy very strong but really really
45:41 medicinal I put mustard greens that came
45:43 out of the garden because I'm growing
45:45 some mustard greens right now
45:47 now mustard greens are really too sharp
45:49 for a lot of people they can't eat them
45:51 because they're too sharp they're like
45:53 oh my God that was like horseradish in
45:56 the worst way it was so sharp okay now I
45:59 don't cut this up that fine mustard
46:01 greens I like because it's a soft green
46:03 I like it to go in just like that but
46:06 what you guys have to know
46:08 is that
46:09 that's an herb you're putting in very
46:12 sharp but the fat hides it
46:15 so you'll see here look how herb that is
46:19 like that's herbed out
46:21 there's no weed in there
46:24 no weed man so it is just straight
46:28 herb right good herb so let's keep on
46:30 moving
46:31 let's go with I think we got to do our
46:34 peppers in there some hot peppers
46:36 let's get a Cayenne
46:40 in that guacamole right now listen you

48:33 in here actually I'm gonna cut an onion

48:38 doing for a second but I'm looking for
48:39 an onion right one here so with this
48:42 onion this is a red onion they're
48:44 usually bitier they're usually hotter
48:47 right
48:50 it's not a sweet onion sometimes there's
48:54 some yellow onions that are just brutal
48:56 right you guys I like to peel back the
48:58 spit the skin and I'll tell you why too
49:01 it's not that you can't eat those it's
49:03 just that they're so chewy They Don't
49:05 Really break down right like the skin
49:07 I know people like to punish me a lot of
49:10 people love that they love the punish aw
49:12 and be like the Skins were the best
49:15 stuff is hey W takes the skin off he
49:18 doesn't know what he's talking about
49:19 that proves it it's not gonna follow him
49:22 anymore he didn't know about this one
49:24 this one person says you gotta have the
49:27 skin
49:29 right
49:30 but I like taking the skin off because
49:33 the skin on the onions could be hiding
49:36 something
49:37 from the market like people like when
49:40 they're grabbing their onions and
49:41 they're you know or you know stocking
49:44 them and they got like bacteria and
49:45 other things on their hands and the the
49:47 pathogens could get up under the skin so
49:51 I like to kind of take a layer off right
49:54 now I'm going to put a little bit of
49:56 this red onion in there that's that's
49:58 what I like to do okay
50:00 like to put a little bit of red onion in
50:05 don't want it too thick don't want it
50:07 too thin
50:08 I'm gonna chop that up

50:48 you can put lime in your guacamole now I
50:50 don't put a lot of lemon in my guacamole

51:04 don't want my guacamole watery
51:07 don't want it too too wet and watery

51:18 okay lime brings out avocado flavor like
51:22 nothing else does it has a reaction
51:26 with the sugar in avocado so lime has a
51:29 reaction with the sugar and the fat and
51:31 avocado so I love lime I like putting a
51:34 lot of lime in my guacamole
51:38 it's one of one of my favorite things to
51:40 do the flavor does it compare I feel
51:43 personally

51:48 obviously see I'm just a little pumped

52:13 life a lot of times the fruit might end
52:15 up on the floor something might hit
52:17 something I was over a friend's house a
52:19 couple years ago and I threw a piece of
52:21 fruit in the air
52:22 and it knocked over his wine glass which
52:26 I thought was funny because I wasn't
52:27 drinking wine
52:29 and the wine glass knocked over and the
52:32 wine went on his carpet
52:34 and it was a white carpet
52:37 so let's talk about salt that's the next
52:40 thing right now if you guys got a second
52:42 okay
52:43 I feel like that's perfect amount of
52:46 lime for the moment
52:48 now
52:49 everybody loves salt in their guacamole
52:52 right or pepper salt and pepper they
52:55 love salt
52:57 here's why I don't use salt in my
52:59 guacamole first of all I'm not a big
53:01 salt fan because you don't want too much
53:03 salt
53:04 in your diet because it ends up building
53:07 up it ends up building up in your liver
53:09 it can build up in your brain I talk
53:11 about that in the brain books you got to
53:13 check it out when you get get a chance
53:14 and check these brain books out
53:17 but the reason why I don't like salt in
53:20 guacamole is it sweats it
53:22 I don't want everything sweating because
53:25 what salt does in here is it sweats the
53:27 onion it sweats the pepper it sweats the
53:30 avocado so it starts to disfigure it it
53:34 starts to pull moisture out of it in the
53:37 wrong way you don't want to do that and
53:39 then it turns into kind of like a sweaty
53:41 slob so I don't like putting salt in the
53:44 guacamole I like to use lime as that
53:47 salt and then I like to use a celery
53:50 stick
53:51 as
53:53 a tool because it's a salty tool but the
53:56 right kind of salt right the good stuff
53:58 so
54:00 you guys know like I've written books
54:02 books about the the sodium that sits
54:05 inside celery right
54:07 sodium cluster salt it's a different
54:09 flavor it's a whole different kind of
54:11 composition
54:13 so
54:14 I don't like to I like it kind of a
54:17 hunkier guacamole for me you guys might
54:19 like it as a creamy puree
54:22 not a big fan of it that way but I don't
54:24 want pole halves in here so I'm just
54:26 kind of mashing up
54:29 the whole halves right kind of breaking
54:31 them up a little bit there we go
54:33 so that when you stick a cracker in
54:35 there if you have guests or something or
54:38 you stick something in there a chip
54:39 because you know someone might like some
54:41 chips that you're not getting like stuck
54:43 on a whole half of avocado
54:48 right now mixing this up
54:55 there we go
54:57 now you can put tomato on top you can
54:59 put tomato on the side you can do
55:01 anything like that
55:02 let me chop up a couple of tools one
55:05 tool I like to use which I'll show you
55:07 right here to actually scoop my
55:09 guacamole I'll show you in a minute so
55:11 let me start making
55:13 um a couple tools here
55:16 so here's one tool I use which people
55:20 think I'm crazy
55:23 but I put guacamole right on a whole
55:25 half of onion like that now I know that
55:27 like probably doesn't seem right and
55:29 someone's got probably something to say
55:31 about that I'm sure like but yeah like
55:35 you know meaning like because it looks
55:36 kind of like so intense sometimes we're
55:38 like oh my God how does he do that like
55:40 so I take like pieces of onion that are
55:42 big pieces like this and I like to use
55:45 that let me chop up some bell pepper
55:47 that's a great tool to pick guacamole on
55:50 right there
55:55 so
55:57 what you can do is you can make some
55:59 some bell pepper slices right here
56:02 so I'm just going to prepare these make
56:04 a little crudite you can have it with
56:05 your guacamole
56:09 right got some bell pepper
56:11 that's amazing that'll go in
56:16 and celery sticks is another great thing
56:18 all on its own
56:22 guys if you just got here we're making a
56:25 medicinal guacamole we actually already
56:27 made it okay so I got a cucumber

56:36 now you can peel the Cucumber if you
56:39 want I wash this cucumber really good
56:41 but the thing about cucumbers though
56:43 organic produce does have they still use
56:47 a coating on the outside of a lot of
56:50 um
56:53 a lot of them so let me just see if I
56:56 can just kind of take down the skin a
56:57 little bit

57:19 I don't like using the skin of a
