Broccoli and cauliflower are true players in the fight against disease. They are everyday vegetables you may find anywhere: from menu items in restaurants and food trucks to, of course, the grocery store. Both broccoli and cauliflower are high in nutrients such as trace minerals, macrominerals, vitamins, amino acids, phytochemical compounds, antioxidants, and polyphenols. And when cooked until soft, broccoli and cauliflower’s fiber is easily digestible. Broccoli and cauliflower’s three powerful nutrients that stand out the most for healing are the high levels of cruciferous-based vitamin C, calcium, and sulfur compounds. These three are of great importance for the restoration of someone’s health. All around the world, people are struggling with dental issues, getting procedures due to cavitations and even losing their teeth and having to rely on dental implants. Consuming cruciferous vegetables such as broccoli and cauliflower on a regular basis can halt the depletion of calcium in the teeth. Broccoli and cauliflower contain a bioavailable, assimilable calcium that can enter teeth and bones easily, even allowing for the possibility of new enamel growth restarting on teeth. Cooked and raw broccoli and cauliflower each have their own special value. For the best digestion and nutrient access, either eat your broccoli and cauliflower raw or cook until tender. When broccoli and cauliflower are only lightly cooked, where the vegetables are still hard and crunchy, many of the nutrients are bypassed in digestion—because cooking has killed the enzymes, so the crunchy pieces of vegetable are not being broken down all the way. It becomes more difficult to access all the nutrients, as many nutrients stay trapped in those vegetable pieces when they pass out with the stool. If you have a sensitive digestion, try steaming cauliflower and broccoli to the point where very soft and practically melt in your mouth. The nutrients will be easy to access and very assimilable, and the fiber will break down easily through your digestion process. Try growing your own broccoli and cauliflower and eating it raw. The enzymes will be intact, which helps the vegetables digest. Eating pieces of raw cauliflower and raw broccoli will bring the highest levels of sulfur-rich compounds. The taste could be very strong. It may almost feel as if the sulfur compounds are sizzling the tongue or that they have a bit of a bite.
