Ginger

Healing Food
Can grate, chop up, throw into hot water to make ginger water or tea Makes 1 to 2 servings Fresh apple juice is an entirely different experience to bottled apple juice. A kick of fresh ginger adds warming and depth to the apple juice. Enjoy this wonderful juice as is, or include the options for spinach, celery, or cucumber for a more mellow, sweet juice; to try different flavors; or to vary the nutrients. 4 red apples 1 to 2 inches fresh ginger (adjust to taste) Optional additions: 1 cucumber, 8 stalks celery, and /or 4 cups spinach Feed the apples and ginger through a juicer, then strain. This juice is wonderful with just the apples and ginger. Or, if you prefer a less sweet juice or simply want to add in some other ingredients for variety, the cucumber, celery, or spinach options will complement this juice perfectly. Serve the juice immediately. Enjoy!
Apricots are so energy-shifting, so transformative, that you only need to eat one to enjoy its benefits. When dealing with a health condition, though, try to consume four apricots daily for support and healing. An apricot offers its greatest benefits from 3 P.M. onward. This is when the fruit’s nutrients are at their highest levels—and most bioactive and assimilable. Have patience with apricot ripening. Wait until an apricot is well ripe before eating; do not eat the fruit underripe. Don’t worry about juiciness, though. An apricot doesn’t need to be dripping with juice to be beneficial. When fresh apricots aren’t in season, sulfur-free dried apricots are an incredible alternative. While not every dried fruit is valuable, apricots tend to hold all their medicinal qualities when dehydrated. The potassium actually increases—unlike many other fruits—when apricots are dried.
